Everything at Ember passes over live coals before it reaches the table — the bread, the vegetables, the fish. We built the kitchen around a single wood-fired hearth, and the menu around what it can do.
Twenty-eight seats. A short, changing menu. No rush to turn the table.
It seasons.
Smoke is the only seasoning we add before salt. Everything after that, the coals do on their own.
It sets the pace.
A hearth cooks when it is ready, not when a ticket says so. That is why the menu stays short.
It lights the room.
There is no spotlight over the pass. The fire is the brightest thing in here, and the room was built around that.
